Brew coffee in a moka pot

A three-chamber pot, a medium grind, and the moment you take it off the heat. Most bitter moka is just coffee that was left to boil.

Tools and materials
- A moka pot
- Medium-fine ground coffee
- Fresh water
Steps
1. Fill the base
Add hot water to just under the valve. A full cold base takes longer and bakes the coffee.
2. Level the basket
Fill the basket and level it. Do not tamp.
3. Stop it early
Medium heat, lid open. When the stream turns pale, take the pot off and cool the base under a trickle of water.
Safety
The pot is pressurized. Do not force a stuck gasket, and keep your face out of the steam. Check that the safety valve moves before you use a pot you do not know.
Common mistakes
- Tamping the basket
- Boiling the pot until the coffee is dry and bitter
A coarser grind if the pot chokes. Same water line.
Proofs
Pulled it when the stream went pale. No bitter boil. The lower chamber was under the valve.
